The Bucha of Byron’s HARD SELTZER range is low sugar, gluten free and low carb – but unlike other low-in-everything seltzers, it actually comes with taste included. The secret ingredient is a splash of our famous kombucha that brings to life Tropical and Acai flavours. It may not realign your chakras but it does make for a particularly tasty seltzer.
ACAI & BERRY HARD SELTZER
This delicious alcoholic seltzer contains a splash of our famous Acai Berry kombucha. This clever little combination probably won’t realign your chakras, but it does make for a super refreshing, tasty beverage. Low in sugar and carbs, it pairs well with a sea breeze on a sunny afternoon.

These world first creations are low-sugar cocktails that blend a splash of the Bucha of Byron kombucha with zero sugar low carb seltzer. It’s like a little win in a tin.
The Bucha Process
Kombucha is a living health drink made by fermenting tea and sugar with the kombucha culture, known as a SCOBY – or Symbiotic Colony of Bacteria and Yeast. The sugar is used up during the fermentation process so it’s very low in sugar by the time it gets to you.
We use a rice-fermentation based seltzer. So rather than just adding vodka or spirit at the end, the alcohol is naturally occurring through the fermentation process. It’s gluten free, mild tasting and keeps the calorie count right down.
We use traditional methods to steep our tea with sugar, before adding in our ‘Mother’ or SCOBY (Symbiotic Colony of Bacteria & Yeast). Then the magic happens.
We ferment our kombucha in a temperature controlled room to keep a consistent fermentation. During this time the SCOBY eats the sugar and increases the acid content of the tea, creating tummy-loving enzymes and probiotics.
Once the Bucha has finished fermenting, we then blend in our fresh natural flavours of Acai Berry and Tropical. We then blend our seltzer with our kombucha and there you have it – a low sugar cocktail in a can.
