There’s no point living forever if you can’t have a little fun along the way. So we’ve mixed our premium kombucha with premium spirits from Cape Byron Distillers (Brookie’s Gin) to create a low sugar cocktail in a bottle.

Vodka & Tropical Kombucha

This low sugar cocktail mixes the Bucha of Byron’s Tropical kombucha with premium distilled Vodka from Cape Byron Distillery. Best enjoyed over ice under a slowly swaying palm tree.

Gin & Lemon Myrtle Kombucha

This low sugar cocktail mixes the Bucha of Byron’s Lemon Myrtle kombucha with superior aromatic Brookie’s Gin from Cape Byron Distillery. Best enjoyed over ice in a gently rocking hammock.

For centuries kombucha has been known as the Immortal Health Elixir. But what’s the point in living forever if you can’t have a little fun along the way? 
These low-sugar cocktails blend The Bucha of Byron kombucha with premium spirits from our friends at Cape Byron Distillers (makers of Brookie’s Gin). 

The Bucha Process

Kombucha

Kombucha is a living health drink made by fermenting tea and sugar with the kombucha culture, known as a SCOBY – or Symbiotic Colony of Bacteria and Yeast. The sugar is used up during the fermentation process so it’s very low in sugar by the time it gets to you. 

Spirits

We source our spirits from our friends at Cape Byron Distillery just over the hill, who keep true to the time honoured traditions and art of distillation to create spirits that capture and showcase the unique terroir of the Northern Rivers region.

The base

We use traditional methods to steep our tea with sugar, before adding in our ‘Mother’ or SCOBY (Symbiotic Colony of Bacteria & Yeast). Then the magic happens.

Fermentation

We ferment our kombucha in a temperature controlled room to keep a consistent fermentation. During this time the SCOBY eats the sugar and increases the acid content of the tea, creating tummy-loving enzymes and probiotics. 

The blending

Once the Bucha has finished fermenting, we then blend in our fresh natural flavours of Lemon Myrtle and Tropical. We then blend our aromatic Botanical Brookie’s Gin and our Premium Vodka from Cape Byron Distillery with our kombucha and there you have it – a low sugar cocktail in a bottle.
