The Bucha Process
Kombucha
Kombucha is a living health drink made by fermenting tea and sugar with the kombucha culture, known as a SCOBY – or Symbiotic Colony of Bacteria and Yeast. The sugar is used up during the fermentation process so it’s very low in sugar by the time it gets to you.
Beer
How beer is made: Malt is first milled before mixing with water to create a mash, which is then filtered to create the wort. This is then boiled and the hops are added, it’s then clarified to create a clear wort. The yeast is then pitched and the magical process of alcoholic fermentation takes place in the tank where it is stored.

The base
Kombucha: We use traditional methods to steep our tea with sugar, before adding in our ‘Mother’ or SCOBY (Symbiotic Colony of Bacteria & Yeast). Then the magic happens.
Beer: Beer is made with 4 simple ingredients – Water, Hops, Malt & Yeast.

Fermentation
Kombucha: We ferment our kombucha in a temperature controlled room to keep a consistent fermentation. During this time the SCOBY eats the sugar and increases the acid content of the tea, creating tummy-loving enzymes and probiotics.
Beer: Beer is fermented in the fermentation tank for different periods of time depending on the beer style you are creating.

The blending
Once the Bucha and beer have both finished fermenting, we then blend them together to create a full strength, lower carb beer in a range of different beer styles. Then we put it in a can so you can put it in your mouth.
